Left over purple sweet potatoes inspired this quick recipe. Ingredients:
2 medium baked sweet potatoes,
2 large eggs,
1/4 tsp celtic sea salt,
1/2 tsp Baking soda (to help them rise),
equal parts brown rice flour & buckwheat flour to make 1/2-1C (amount needed determined by consistency of batter),
