Purple sweet potato pancakes

Left over purple sweet potatoes inspired this quick recipe. Ingredients:



  • 2 medium baked sweet potatoes,

  • 2 large eggs,

  • 1/4 tsp celtic sea salt,

  • 1/2 tsp Baking soda (to help them rise),

  • equal parts brown rice flour & buckwheat flour to make 1/2-1C (amount needed determined by consistency of batter),

  • *Served with: Dark maple syrup, spinach and berry salad, and organic lamb breakfst links.
